Now you may think Mardi Gras is all about Bourbon Street and the beads...but Craig is a native and he knows it's all about the King Cake or as the French call is the Galette de Rois. I made my first on Epiphany Day and it will definitely not be my last. It's just cinnamon roll dough left a tad sticky and rolled up with whatever filling you like (we like almond paste with brown sugar or cinnamon, butter, and sugar but cream cheese s also delightful) and put into a ring shape instead of cutting into rolls. Once it's baked about 15 minutes or lightly brown pour on cream cheese or powdered sugar icing while still warm and sprinkle generously with gold, green, and purple sugars. The gold stands for power, green is for faith, and purple is for justice.
Craig's family is going to New Orleans next week for Mardi Gras and although we can't go we will celebrate at home eating sucking some crawfish heads (hey, don't knock it til you try it!) and eating some homemade King Cake.
